Handle With Care

More than half of the world’s good food ends up in the garbage before it ever even makes it to a cooking pot. Europe and North America throw away enough food before it even reaches the table, that all the hungry people in the world could be fed three times daily. If Germans reduced their food waste by one half, it would have an effect on carbon emissions equal to eliminating every fourth automobile in the country.

The facts are startling. The avoidable waste adds up with dire consequences. And it isn’t even garbage – it is tasty, nutritious, and yes, still fresh food. Food discarded long before it ever makes it to a cooking pot or a plate, because it does not meet a standard of visual perfection or expiration date (already padded to ensure freshness to the very last day) perceived too close. The overzealous, highly competitive supermarket marketer in search of the perfect red tomato and fresh appearance irrelevant to quality taste has created a monster of a spoiled naïve consumer oblivious to the consequences of preferring ever neater rows and brighter colors.
